My little one is a pretty good eater but she gets tired of the same thing quickly. I am always trying to find easy lunches that she will like and give her enough nutrients. She also does not like meat and she is lactose intolerant so these meals are vegan. I hope this gives you inspiration and your little ones enjoy it just as much as mine Here are 5 vegan lunches for toddlers.

Pan Fried Tofu with Spinach Salad, Avocado and Banana

This is my toddler’s absolute favorite lunch. She devours it every time I make it. I just slice up the tofu and fry it in a pan on medium-high heat with soy sauce, maple syrup, and fresh garlic. The spinach salad also has shredded carrot, sliced olives, and sliced tomatoes with an avocado dressing. The dressing consists of one avocado, smashed, and dill, garlic powder, onion powder, paprika, and salt. I put a teaspoon of apple cider vinegar and a little bit of water to smooth it more.

Our favorite vegan cheese is the Chao brand. It’s so creamy and delicious. I sautee the beans in soy sauce and give wild blueberries, which are her favorite.

What is better than meat and cheese? I use the Kroger-brand vegan sliced meat and Follow Your Heart Smoked Gouda cheese. I slice it up and she normally eats all of it. This is one of her favorite meals and it is so simple and easy to put together for her.

I buy the mini bagels and smash about a slice of avocado on one half of the bagel. My favorite vegan macaroni and cheese is the Daiya brand. It’s so creamy and delicious. So, it always makes her so happy when I cook it.

Spinach Quesadilla with Apple Sauce and Pasta Salad

I just use the same Follow Your Heart Gouda cheese and put a few pieces of spinach in it to give them extra greens. The pasta salad I keep very simple. I add some avocado and black olives with a pinch of nutritional yeast and pink sea salt.
